About the project

The company, now known as Great Wolf Resorts, started in Wisconsin Dells, WI, as a small, family-owned waterpark called Black Wolf Lodge. Through a series of acquisitions and significant growth, the company now operates more than 20 locations in North America, was last valued at $2.9B in 2019, and reported annual revenue of $921.9M in 2023. These indoor waterpark experiences offer a more affordable* family vacation experience within driving distance of major cities.

While Great Wolf always offered dining options to their guests, they hadn’t invested in developing the offerings and operations with the same money, energy, and attention they had given their lodging and waterpark experiences. In 2018, the corporate Food and Beverage Director recognized the need to enhance the dining experience for the millions of guests they welcomed annually. The food and beverage training programs had remained mostly unchanged since the early years: a collection of lengthy, unwieldy Word documents with dated verbiage and significant redundancies. What worked for a mom-and-pop business no longer served them. I worked with Great Wolf from 2018 through 2022.
